From the peninsula of Chuao, a semi-natural Venezuelan Eden, the Spanish galleons transported to their mother country the precious seeds of the cocoa which is produced in this plantation overlooking the ocean. All cargo was an exclusive benefit of the royal pantries and confectioneries. Since then these seeds have been utilized to aromatize the most important chocolates.

Since Amedei has the worldwide exclusive right, for the first time it is possible to taste it in its purity.
In Chuao the prevalence of its aroma is prune and red fruits, the potency of its taste and the acidity leaves space to a long, and very clean end.
 

PORCELANA

"Thanks to the assiduous work in the plantations I have been successful in securing the best production of the Porcelana. Cecilia, starts from these seeds, and gives life to a very complex fruited chocolate which explodes in one’s mouth, a graceful politeness and finishing with a very long and armonic sensation."

Porcelana is a cacao “criollo” . It means genetically pure. It is the "father" of all cocoa.

It is a product which is born from very little fructiferous and particularly delicate plants, but the seed has an aromatic impact, a roundness, a sapidity and a gentleness which is really incredible.

"The “family’s treasure”.“This blend completely expresses the philosophy of Amedei. Here 9 plantations have been discovered, joined together, treated, and brought into production over the years. The CRU come from specific areas of production and, just as grapes are born under a particular sun and from a special territory, have a striking personality , and a definite taste and flavor.
They are the immediate and savage expression of the cacao. The raw material arrives without being treated. The aroma has an overpowering strength, and sometimes the acidity can be felt more, and ends with a pleasant sensation of freshness and cleanliness.

The Cru explain the genetic differences compared to the cacao of today, initiating from the seeds which characterize the type of each plant, selected and cultivated according to precise rules by the producers in the countries of origin, fermented and dried under the control of Amedei’s agronomists.

France has been my indispensable place to embark on the paths of the chocolate. I studied for years at I Maestri Chocolatier d’Oltralpe – The Chocolatier Teachers beyond the Alps.

On the day in which my future was to be decided, my teacher ordered me to immerse my arm in a big pot of boiling hot caramel. Putting aside my fear, I put my arm under cold water and passed the initiation test. Since then, my creative moments are the most intense, difficult, and exhausting.

"I had my most beautiful challenge when I succeeded in creating the real Mediterranean praline by utilizing the raw material of our land only: fresh and dry fruit, seeds, and roots".

The pralines by meditation are the latest creations of Cecilia Tessieri, a new procedure of manufacture the cacao where the importance of the raw material extends to a kind of mental dimension of tasting: a meditation that predisposes to new experiences, to new contacts, to a knowledge that does not want to stop, that does not want to remain on the surface. Six small poems of taste, to prolong the pleasure of the palate in a transgression that has the flavor of chocolate.

The pralines, Cecilia’s first creation, a jewel of flavors in which a subtle chocolate shell contains the preciousness of a filling that reveals itself in a whirling of sensations.
