The Story: The pretzel - an

When in the eighties and
nineties some producers of
leach pastries (Laugengebäck)
vanished from the market, it
seemed that traditional
German snacks would
disappear. But it turned out
that there were other
reasons for this
development. While many new
products were not successful
on the market or were
hustled out by the latest
snack «innovations», the
pretzels remained very
popular with old and young
people or at least whenever
the brand kept what the
pretzel promised.
Crispy «permanent pretzels»
are still in. The constant
popularity of leach pastries
(Laugengebäck) proves that
there is life in the old dog
yet! In the face of an
ever-increasing range of
snack offers and constant
new taste incentives the
pretzel seems sometimes
out-dated and at best
nostalgic.
The Story: A CONTRIBUTION
TO TRADE CULTURE
In March 2001 the largest
Austrian newspaper raised a
question in its weekend
edition: «What is ‹European›
seen from the economic point
of view?»
In an age of globalisation
where all technical
achievements seem to be
transferable, people tend to
look for lasting cultural
symbols. And strangely
enough they find one of the
key symbols of the European
comprehension of economy: in
the pretzel. And the banner

We have experienced similar
situations with our American
business partners: «We like
this kind of European
pretzels». How often we
could point out that it is
more difficult in Europe
itself to sell pretzels
outside the German speaking
area.
To be honest, our pretzels
are different from the
corresponding American bulk
goods, although these
articles are sometimes
offered as «Bavarian
pretzels» with white-blue
rhombuses and the film star
Paul Newman pictured on the
package.

Connetable (France) – Canned
Fish


Established in 1853, Connétable
is probably the oldest fish
cannery in the world still in
activity; specialising in canned
fish. Originally founded by Mr
Chancerelle in Douarnenez
(Brittany) and after six
generations of family ownership,
Connétable is steeped in history
resulting in a wealth of
expertise and knowledge about
canned fish. The range of
sardines, tuna, mackerel
fillets, anchovies and salmon is
top quality and superior to any
produced elsewhere.
The turbulent Atlantic coast
produces a distinctive sardine,
well known to gourmets due to
their distinguishing firm flesh.
A limited edition vintage tin of
sardines is released once a year
that is highly sought after by
food connoisseurs, many of whom
leave them to mature as, like a
fine wine, sardines improve with
age and can be laid down for up
to five years. Highly decorative
with old fishing prints, only
40,000 tins are produced every
year. The sardines are
hand-trimmed, gutted and
immersed in olive oil to capture

Henaff (France)
- Pork Pate
Starting in 1912, aware that
fish could be canned, Jean
Hénaff thought that pork could
be canned as well. From this
idea, a star was born: the
original Hénaff Pork Pâté recipe
using all the fine cuts of the
pig, including fillets and hams.
It all started very modestly. In
1914, the factory canned only
four pigs in its already blue
and yellow tins, this increased
to 73 in 1915, and about a
thousand in 1925.
The Hénaff adventure has been
one of the greatest success
stories of a company in
Brittany.
The recipe for success of this
small company is simple : it has
always kept to traditional
methods while applying strict
regulations required by major
international companies.

The Genuine Hénaff Pâté: sold by
the million each year. This
famous Pâté is made only with
pork (96%) including hams and
fillets, salt, spices and a
fraction of sodium nitrite to
keep its lovely pink color. Of
course, to make the famous
Hénaff Pâté it must be enhanced
with the little secret “je ne
sais quoi” which is a closely
guarded Hénaff family secret.
Made exclusively with fresh
